Crafting the Perfect Pie

Creating the perfect Smoked Brisket Meat Pie is a labor of love. We start by sautéing finely diced onions and minced garlic until they're golden and fragrant. Next, we add in our succulent smoked brisket, shredded to perfection and seasoned with Humphrey's Divine Bovine. Ingredients:

  • 1 medium-sized smoked brisket (cooked with Humphrey's Divine Bovine seasoning)
  • 1 tablespoon olive oil
  • 1 onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup diced carrots
  • 1/2 cup finely diced celery
  • 1 cup beef broth
  • 2 tablespoons all-purpose flour
  • Salt and pepper to taste
  • 2 tablespoons Humphrey's Awesome Sauce
  • 2 refrigerated pie crusts (or homemade if preferred)
  • Egg wash (1 egg beaten with 1 tablespoon of water) for brushing

Instructions:

  1. Preheat your Humphrey's smoker to 225°F (107°C) using your favorite wood chips or chunks for smoking. Oak or hickory pairs well with brisket.

  2. In a large skillet, heat olive oil over medium heat. Add finely diced onions and minced garlic, sautéing until translucent and fragrant.

  3. While the onions cook, shred the smoked brisket into bite-sized pieces, discarding any excess fat.

  4. Add the shredded brisket to the skillet with the onions and garlic, stirring to combine.

  5. Add diced carrots and finely diced celery to the skillet, mixing them in with the brisket mixture.

  6. In a small bowl, whisk together beef broth, flour, and Humphrey's Awesome Sauce until smooth. Pour the mixture into the skillet, stirring continuously until the sauce thickens and coats the brisket and vegetables evenly. Season with salt and pepper to taste.

  7. Roll out one of the pie crusts and line the bottom of a pie dish with it. Spoon the brisket and vegetable mixture into the pie crust, spreading it out evenly.

  8. Roll out the second pie crust and place it over the top of the brisket filling. Seal the edges of the pie crusts together and crimp with a fork to create a decorative border.

  9. Brush the top of the pie crust with the egg wash for a golden finish.

  10. Place the pie dish in the preheated smoker and cook for 1.5 to 2 hours, or until the crust is golden brown and the filling is heated through.

  11. Once done, remove the pie from the smoker and let it cool for a few minutes before slicing and serving.
