Bacon Wrapped Grilled Peaches with Balsamic Glaze

Grace our new office girl found this awesome recipe for bacon wrapped peaches.  I can't wait to try this! The only dilemma I see with it is:  Do I eat it as an appetizer, a side dish or a dessert!

I was invited to dinner with the family Sunday afternoon, and wanted to bring something delicious and different. I usually make the same types of things, but I wanted to surprise the fam with something different and fresh. I found a recipe for Bacon wrapped peaches and decided to give it a try, and let me tell you, it was a hit! It’s sweet and salty all in one bite…basically a slice of magic.

 I was inspired to make this new recipe due to my new interest in BBQ from my new job! My coworkers are always testing new recipes with all types of meat so I figured why not. If it didn’t go well, I could always pick up a pack of Oreo's on the way over. 

 The recipe was very simple. The idea of a peach wrapped in bacon may sound a little bizarre, but the salt in the bacon really expands the sweet taste of the peaches! You may not believe me, but you’ll have to try it! Everyone in my family loves peaches so perhaps we’re biased, but don’t knock it till you try it.

 After eating more than my fair share when it was finished, I packaged it up and headed for the parents’ house to give everyone my surprise! The look on my sister’s face when I opened the package was utter shock! Told you people would be caught off guard.

 The dish was a hit! Everyone gobbled it up, and it was approved by people of all ages (mainly 13-50). If anyone is interested in trying something fresh and a little bit out of the box, I highly suggest this recipe!

 

Ingredients
  • 4 large peaches
  • 12 ounces bacon
  • 60 large basil leaves plus more for garnish
  • olive oil
  • balsamic glaze, store-bought or homemade
Instructions
  1. Set a grill to low heat and preheat for 10 minutes or so, brush the grill grates with a paper towel dabbed in oil. I use grapeseed oil.
  2. Wash and dry peaches. Cut each peach in half and then each half into 4 quarters. Place one large basil leaf on each side of the peaches. Cut the bacon slices in half. Wrap each peach slice and basil leaves with a slice of bacon. Pin the loose end of the bacon slice with a toothpick. Repeat with remaining peaches.
  3. Brush the bacon wrapped peaches lightly with olive oil so the bacon doesn't stick to the grill. Grill the peaches until the bacon is cooked, turning so all sides are evenly cooked, about 20 minutes.
  4. Transfer to a serving platter and remove toothpicks. Drizzle with store-bought or homemade balsamic glaze.
  5. Serve hot or at room temperature.
