Grilled Chicken Burger with Apple Butter Onions

This past weekend I stopped at a local honey and jam store to pick up my order of apple butter 🍎🍎 and apple pumpkin butter!  Naturally Jammin is located just a few towns over from Humphrey's Headquarters!  They are my go-to place for honey based jams, and raw honey (secret ingredient for my award winning rib recipe). 🤐 

I wanted to put the apple butter I purchased to goo use and wanted to do a chicken burger.  Something I don't normally do, but apples and chicken just seem to go together.    Here's the recipe:

Ingredients

Burger

  • 1 pound ground chicken
  • 1/2 cup panko bread crumbs
  • 1/4 cup Naturally Jammin apple butter 🍎🍎
  • 2 tablespoons finely minced cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground pepper
  • 1 cup grated smoked Gouda cheese
  • 4 full-size burger buns or 6 slider buns

Onions

  • 1 large sweet onion
  • 2 tablespoons olive oil
  • Kosher salt and pepper, to taste
  • 1/4 cup Naturally Jammin apple butter 🍎🍎

Instructions

For burgers:  🍔

  1. In a bowl add ground chicken, panko bread crumbs apple butter, cilantro, cumin, smoked paprika, kosher salt, and ground pepper.
  2. Mix together until combined. I use my hands to do this as I find it the easiest option.
  3. Shape into 6 slider or 4 full-size burgers.
  4. If cooking your burgers on a grill preheat your grill to medium heat and grill until fully cooked – about 8-10 minutes depending on size. Top each burger with cheese and let melt.
  5. If cooking your burgers in a pan heat 2 tablespoons oil over medium heat and cook until one side is browned, flip, and continue cooking until fully cooked and brown on each side. Top each burger with cheese and let melt.
  6. After the burgers are cooked place on buns and top with apple butter onions.

For onions:

  1. Remove the papery skin from the onion and trim off the top and bottom.
  2. Cut in half and thinly slice.
  3. In a 12-inch skillet add olive oil and set over medium heat.
  4. Once the oil is hot add in the onions, kosher salt, and pepper.
  5. Cook for about 20 minutes or until the onions are soft and caramelized.
  6. Add in the apple butter and stir to combine.
  7. Keep warm while your burgers cook.
